Its hot, you don’t feel like cooking and you want something healthy. No problem.

Open your cabinet and combine cans of beans, your choice on what kind of bean you use.  I use chick peas and kidney beans, but you can add or substitute green beans or black beans.  If you love cilantro, as I do, add a tbsp of cilantro paste (found in the herb section of the store) and a tsp of oil.


Combine in a bowl and mix.  Set in the fridge and eat as you wish.


I love having this in the refrigerator as a side dish or with lunches.  A bonus is that Baby Girl loves it, so if you want your child to eat more beans try this recipe.
