The Pediatrician said that Baby Girl needs to have more iron in her diet and a great way to do that is with spinach.  I bought a box of frozen cooked spinach, sautéed it for her to try, and discovered that she loves it! On the flip side of that, I have also discovered that her diaper turns into a disaster area if she eats too much spinach. SO, I decided to use half of the box for her and use the rest to make spinach lasagna. Two birds and one stone!

Now for the Lasagna Recipe:

Ingredients:

  • Spinach
  • Lasagna Noodles
  • Pasta Sauce
  • Shredded Mozzarella

Directions:

  • Boil lasagna noodles and set aside.
  • Cook spinach and set aside.
  • Coat glass pan with cooking spray.
  • Spread thin layer of pasta sauce in pan, followed by cooked noodles, then spinach, then cheese. Repeat layers until your last noodle layer is on. Cover the last noddle layer with sauce, then cheese and bake at 350 degrees for 30 minutes.
