It is the end of summer, and that means fresh veggies are everywhere. I am currently trying to make use of the fresh zucchini and tomatoes that we have so that means recipe posts from me! This week I will share an easy zucchini recipe and next week will be the tomato salsa I attempted to make. Enjoy! Cheers, T

Slice Zucchini

Cover all slices with egg.

Roll egg covered zucchini slices in breadcrumbs. I prefer to use Bisquick but ran out; you can also use flour.

Drop them in the deep fryer. If you don’t have a deep fryer, use oil in a frying pan.

Place on paper towel to absorb the excess oil and enjoy!
